In our homes, we typically avoid reusing cooking oil multiple times, especially for deep frying. Repeatedly using the same oil for frying until it becomes dark and then repurposing it for “shito” is a common practice in some households in Ghana.
However, it’s important to note that this kind of oil, which has been subjected to high temperatures and multiple frying cycles, can indeed become high in trans fats, which are known to be harmful to health.
Mrs. Efua Owusu-Ansah, a Senior Dietitian at the Komfo Anokye Teaching Hospital, has issued a warning about the potential health risks associated with overused cooking oil.
She has specifically mentioned that consuming such oil can lead to heart diseases.
Mrs. Efua Owusu-Ansah said this practice of reusing cooking oil multiple times, especially without filtering or replenishing it, can cause the oil to degrade and form harmful compounds like trans fats.
Trans fats, according to her, are known to increase the risk of heart disease and other health issues.
She advised Ghanaians to use fresh cooking oil for frying when possible and to avoid reusing oil excessively to maintain a healthier diet and reduce the risk of health problems associated with the consumption of trans fats.
She says proper oil management, including filtering and changing oil when necessary, can help ensure that the oil remains safe for consumption.
